Launched at the start of May at the Beavertown Taproom in London, this is their foray North of the border....
The Brewery has invested in a segregated ‘wild’ space away from our clean/sanitized brew house and fermentation. Head of the dedicated Tempus Project brewing team, Jonny Hamilton, will introduce us to the methods behind the project that today houses 450 barrels, a pair of Foeders and a couple of traditional terracotta amphora, all being utilised for their unique transformative properties, and comparing them to the methods learnt from traditional and low intervention 'wild' winemaking practices.
